CURLY KALE

Curly kale has tightly curled, ruffled leaves that form a compact, bushy head. The edges of the leaves are frilly and wrinkled, giving it a textured appearance. The leaves can vary from medium to dark green, with some varieties also showing a slight purple tinge. The stems of curly kale are thick and fibrous, often tough and bitter. Typically, the stems are discarded or used in stocks, while the tender leaves are the main part consumed.

Kale is an excellent source of vitamin K, vitamin C, vitamin A, folate, and vitamin B6. It also contains minerals such as calcium, potassium, magnesium, and iron. Curly kale is loaded with antioxidants, including flavonoids and carotenoids, which help protect the body from oxidative stress and support overall health. The high levels of beta-carotene (a precursor to vitamin A) also contribute to good eye health.
